- 2oz Plantation Rum
- .75oz Caribbean Pineapple Syrup
- 1oz Lime Juice
- 1oz Coconut Cream Syrup
- Dash of Angostura Bitters
- Top with Mongibello Blood Orange Juice
Garnish with mint, Dehydrated blood orange, and a shot to the head of blood orange.
For todays spook-tacular cocktail I went tropical and riffed on a painkiller. I substituted a pineapple liqueur instead of juice. To balance the extra sweetness I added a dash of bitters and lime juice. Topping it with blood orange adds more depth than traditional orange juice but also gives a nice bittersweet finish. Sure to be the cure for a slow Halloween.To make the coconut syrup bring 1 cup of canned coconut milk to bubble then stir in 1 cup of sugar. Once dissolved stir in a cup of cream of coconut. Once fully mixed remove from heat, allow to cool and bottle.
